Pesto Pasta with Stawnichy’s Spicy Italian Sausage
We are always asked, what is the best way to use Stawnichy products. There are so many ways and to start helping our customers along we’ve decided to start a monthly recipe post. These are not recipes we found online and quickly put together, these are tried, tested and true recipes coming from our family, our workers and our customers. Enjoy.
This recipe comes from our Sales and Marketing Manager Dean De Benedetto. As a true Italian and an honorary Ukrainian he had this to say about the dish: “This is an easy to prepare dish that will keep your active family fueled and ready for all their activities. Our spicy Italian sausage is a perfect addition to this tasty meal!”
Ingredients
- 1 large yellow bell pepper
- 1 large orange bell pepper
- 10-12 white mushrooms
- 1 small jar of julienned sun-dried tomatoes, drained
- 1 bag of spiral pasta (500g)
- 1 jar of pesto sauce (can make your own, but it is just as easy to buy prepared pesto)
- 2 packages of Stawnichy’s Spicy Italian Sausage
- Fresh Basil and Parmesan
Instructions
- Slice peppers and mushrooms and begin sauteing together in a frying pan. Cook until they are still crisp, and remove from heat when done.
- Drain oil from sun-dried tomatoes – put tomatoes aside for use later.
- Bring a large pot of water to a boil – add in 2-3 TBSP of olive oil and a bit of salt to keep water from boiling over when cooking pasta. When water has come to a boil, add in pasta and keep stirring until pasta is at desired softness.
- While pasta is boiling, place sausage in large frying pan on medium heat and cook until fully cooked throughout. Keep turning as cooking to avoid burning the sausage.
- When sausage is done, remove from heat and either leave whole, or slice.
- When pasta is done, remove from heat, drain and put drained pasta back into large pot.
- Stir in ¾-1 cup of room temperature pesto sauce to pasta (to taste). Add in cooked veggies and sundried tomatoes.
- Put desired amount of pasta into bowl, top with sausage, fresh basil and parmesan (to taste). If you’re looking for a slightly healthier dish place the pasta on a bed of arugula and remove parmesan.
- Share with friends and family.
